Method

  1. Marinate the pork shoulder with the oil, garlic, and seasonings for at least an hour.
  2. Heat the grill until the grates are screaming hot and lightly oiled.
  3. Grill in close contact, turning once, until charred outside and just cooked within.
  4. Rest off the heat, finish with a squeeze of honey, and serve.
